It would be great to host emails ourselves.

It's not realistic to run our own outbound mailserver
- maybe we can use the current cyon hosting (will this work with DKIM?)
https://github.com/stalwartlabs/stalwart seems like a good, modern option
- There is a pending upgrade to 17 in nixpkgs/nixos module, might be worth to directly implement that.
https://nixos-mailserver.readthedocs.io/en/latest/index.html is a alternative using a more classical software stack
